Welcome to Day 11 of the 12 days of Christmas on Ellie Bakes, where I will be sharing a festive recipe every day until Christmas Eve. I think Christmas is the best time of the year for baking, and I have lots of great recipes to share!

These mini chocolate logs are so cute, just the right size to serve for tea on Christmas day, and look really effective with the markings and icing decorations. Make sure to cover the sponge with a tea towel after you have removed the baking paper, or it could dry out and become difficult to roll.

I used gingerbread coffee syrup in the filling to give it a spicy taste, but you could use rum or any other syrup in place of it. The decorations are really easy to make – we used icing coloured with gel food colourings rolled into balls and cut into holly leaves using a cutter.

These gingerbread biscuits are prefect to make with children. They can help with rubbing the butter and flour together, as well as rolling the dough out and cutting shapes. If you’re prepared for the sticky hands they will also love helping to ice and decorate the biscuits, but make sure you keep the lids on sprinkles which aren’t being used… we had an incident with silver balls and I think we’ll be finding them in the kitchen for a long time to come…!

These Christmas cupcakes are really cute, and a great alternative to a rich fruit cake.  They are great fun and really easy to decorate, perfect for making with children now the schools have broken up for Christmas!

We made some reindeer ones, using a red jellybean for the nose, mini marshmallows and writing icing for the eyes and pretzel sticks with flaked almonds attached on with icing for the antlers. We also made some adorable snowmen with marshmallow hats and pretzel arms.

These cupcake jars are perfect as last minute Christmas presents, as they can be assembled with ingredients you’re bound to have in your cupboard. They look really pretty when layered up, and would be great as a gift with some cupcake cases or even a mini wooden spoon.

Mince pies are a Christmas essential, and these are really simple to make. They are perfect to make for Christmas gatherings, and are easy for children to get involved with!

You can vary the additions to the mincemeat – I also like using orange zest and chocolate chips, or you can add other dried fruits like cherries and apricots. You can also use different toppings, I like to use a brown sugar meringue, or a simple crumble mixture as an alternative to pastry.

Welcome to Day 3 of the 12 days of Christmas on Ellie Bakes, where I will be sharing a festive recipe every day until Christmas Eve. I think Christmas is the best time of the year for baking, and I have lots of great recipes to share!

These rocky road are the perfect Christmas gift, as they can be cut into neat little squares, which, when packaged in little paper bags with ribbon and labels look really cute. They would be great to give to teachers, relatives, or chocolate loving friends!

A couple of my friends (who shall remain nameless!) hate it when I put raisins in my rocky road, as they are ‘too healthy'(!), so for them I have made a plain version, simply with biscuits and marshmallows. I’ve also put the ingredients for a Christmassy version, with orange zest and ‘healthy’ dried cranberries.

A gingerbread house is a great project for a grey December day, as it takes a while to make, assemble and decorate. It’s great fun to decorate, and is perfect for entertaining children during the holidays.

My sister and I made this one, and we decided to use flaked almonds for roof tiles, and pipe icicles made of royal icing to give it a snowy effect.
